Chocolate Chip Pancakes (Soaked & Whole-Grain)

Here is what my finicky son practically lived on for a season of his life.  If it weren’t for the amazing fattening abilities of such a breakfast I might try to live on these too! They are soft, fluffy, just sweet enough with semi-sweet chocolate and coconut sugar, they are amazing cold with the edges stiffly chewy with all the coconut oil used for frying…

Basic pancake flavor and ingredients become heightened nutritionally by the traditional preparation method of soaking the whole wheat flour.  This is to neutralize the phytic acid that might prevent us from absorbing the full, and impressive benefits of whole grains.
