Salted Pecan Honey Brittle at the Nourishing Gourmet: Gifts for the Holidays

Once again, you can find an original candy recipe of mine over at the Nourishing Gourmet. This is part of a 12-Days-Of-Christmas Gift series. I feel rather giddy with excitement at being part of a blog feature.

Plus, the delightfulness of a festive, cream-mellowed, and nut-gilded Pecan Brittle is undeniable. I never knew how simple and how fun candy-making can be. All the fascinating stages of sugar and how a few degrees can be the difference between a sauce, a caramel, and hard candy. I will add though, I did leave the house lingering of burnt sugar many times in the process. So, if you enjoy experimenting on your own, I would definitely recommend using some nutrient-free junky (and cheap!) white sugar until you know what you are hoping for in say, the more expensive and healthful coconut palm sugar or local honey concoctions.
