Kimberly from the Nourishing Gourmet has continued to allow me to contribute on her stellar blog another month, despite my many technical issues, computer breakdowns, and worst of all, going live on her blog with a draft post! Fortunately, she laughed it off via FB message but my spirit remains very mortified.
On a more positive, delicious note, I have experimented and worked out a “skillet” cake recipe for this month. I call it a skillet cake because it’s all sunny with cornmeal and resembles a skillet cornbread and yet has sweet butter “cut in” per shortcake-making. Peaches are one of summer’s most fabulous fruits and though I could eat them fresh every single day, it seems a culinary shame to not include them in some super-nutritious baking now and then. Also, this is the results of my initial foray into coconut sugar which has all the benefits of acting like white or brown sugar in baking while carrying an impressive list of nutrients, including potassium and a much lower Glycemic index.
